Chenxi Huang

Chenxi Huang is a full-time assistant professor at the School of Life Sciences, Hubei University, China. She obtained a Ph.D. from Huazhong Agricultural University, China. In the last five years, she has contributed as co-author to thirty-four peer-reviewed papers and two book chapters on foodborne pathogens. She is an active reviewer for various food science and microbiology journals and is an editorial board member for two international journals. Her research focuses on biosensors, molecular technology, and phage-based technology to support the development of novel, highly specific, rapid, low-cost methods for quality control as well as separating and detecting Salmonella and other foodborne pathogens and contaminants.

Over the past few decades, Salmonella has been one of four key global causes of diarrheal diseases and the major cause of foodborne pathogens that could lead to salmonellosis globally. Thereby, a comprehensive overview of recent trends in Salmonella is of great importance for its accurate detection and precise control under different conditions. This book provides an insightful overview of Salmonella, starting from the mechanism of Salmonella transmission, infection, and antimicrobial resistance. Moreover, it also presents new insights into Salmonella prevention and control strategies such as novel antimicrobial agents and methods. The final section discusses novel Salmonella detection and identification technologies, highlighting ongoing issues, recent advances, and future directions in Salmonella diagnostic approaches and prevention strategies.
